Blue Corn Posole is similar to the traditional, more common, White Posole. The blue corn is a beautiful dark blue in color and holds its firmness a little more than the White Posole after it is cooked. It makes a hardy meal that is excellent when prepared with pork and topped off with red chile sauce. Sopaipillas or Corn Bread are a nice side.
First time trying , always used white corn and found the blue corn was so good that will likely purchase more.

The Blue is Fantastic!
I have eaten Yellow Corn Posole for years, and never had the Blue Corn before. It has a unique, almost fruity, flavor that blew my socks off! I am a New Mexican, transplanted to the east coast, and I couldn't survive without my regular shipments from Sichler Farms! :)
